Flavor-wise π: cinnamon is sweet, slightly spicy, and warmly aromatic. Cassia is lighter, with a mild sweet-spice taste and a bit of bitterness.
Hereβs the most important part β οΈ β cinnamon is very easy to buy fake! Many sellers use cassia instead to save cost because itβs cheaper. If you accidentally use cassia in your whiskey, it will turn bitter and harsh, covering up the whiskeyβs natural vanilla and wood aromas π¬. So remember π never use cassia in whiskey!
